Spring Lunch for the Kiddos

Finding a quick, essay and somewhat healthy lunch for the boys is not an easy fete. I have one kid who will eat anything you out in front of him and another who thinks the only acceptable lunch food is Dino nuggets. (Enter eye roll here).

However, he will eat peanut butter in all forms and recently discovered he likes Nutella. I mean it’s like chocolate peanut butter so who wouldn’t like it right? It also seems like kids will eat food if it’s presented in a cute way. Now, don’t get me started on those Pinteresty food plates where parents make a whole ocean scene out of hot dogs and fruit. Ain’t nobody got time for that! But this little lunch took me about the same amount of time it takes to make a peanut butter and jelly, and it was something cute and different for a special lunch. Plus side, it can be made as nutritious (or not) as you’d like!

The one I made was more on the sweet side. But you could totally do a savory one. I’m thinking of doing one with cheese and decried beans sort of quesadilla like. This kid will eat anything with beans and cheese!

So this isn’t even really a recipe. It’s just taking what you have and making it cute.

I used a whole wheat tortilla, but you can use a regular or whatever. I cut the edges to make t more “egg” shaped.

Then to make the designs, I just put some peanut butter in a small ziploc bag. I snipped a corner and use so it like a piping bag to pipe decorations. I did the same with the Nutella. Then, I just let Koa use raisens and ¬†sprinkles to decorate his “egg”.

Some other yummy combos:

Softened cream cheese and jam

Peanut butter and jelly

Peanut butter and marshmallow fluff

Almond butter and honey

Refries beans and cheese

Decorations:

raisens, sprinkles, chopped nuts, cereal, mini marshmallows, mini chocolate chips, cheese, salsa, sour cream…

Do you have any other yummy suggestions?!
