When I turned 30, my best friend got me the coolest birthday present. A subscription to My Baker’s Box. It’s a subscription service that delivers a themed box of baking accessories to your door every month. It’s super cute and they even send little cards with recipe ideas and the accessories they send are top quality. Things like themed cupcake liners, baking cups, plastic push pops, sugar decorations, paper straws, flavorings, mini baking pans, etc. I actually used items from My Baker’s box to make my Valentine Cookies and Patriotic Popcorn.


This month’s theme may be my favorite yet! It is a camping theme. Now, anyone who knows me knows I am NOT a camper. Like at all. I need a shower, and toilet, and bed. Basically, a hotel room is my camping. My husband on the other hand? Well, he’s an Eagle Scout. Enough said? Yeah, he thinks camping is the greatest thing ever and would love to do like a month long backpacking trip in the backwoods of the middle of nowhere.  he can’t wait until the boys are old enough to go with him. I’ve told him camping can be his “thing” with our boys. Mommy will stay home. Alone. And sleep. And bake!

S’mores are the quintessential camping treat. And I LOVE S’mores. So even though I am not a camper, this month’s My Baker’s Box theme inspired me to make something S’Mores related. For this recipe you will use the Marshmallow Frosting recipe here, with an amazing graham cracker cupcake and a little chocolate ganache. I promise it is waaaay easier than it sounds. Really. Koa helped me with the whole thing.

These were amazing. The cupcake has the perfect graham cracker flavor and is honestly delicious on its own. I may even add chocolate chips to the batter next time and eat it like a muffin! But top it off with the ganache and Marshmallow Frosting and it is the perfect S’Mores in cupcake form!

I used the super cute tree baking cups from My Baker’s Box this month to bake these, but you can do the same thing with regular cupcake liners.

S’Mores Cupcakes


    Graham Cracker Cupcakes
  • 1 1/2 cups graham cracker crumbs, finely ground
  • 1/2 cup all purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 cup salted butter, softened
  • 2/3 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3/4 cup milk
    Chocolate Ganache
  • 12 oz chocolate chips, milk chocolate or semi sweet
  • 1 cup heavy whipping cream


  • Preheat oven to 350. Prepare a muffin tin with 16 cupcake liners.
  • In a large bowl, or the bowl of your stand mixer, beat together the butter and sugar until fluffy.
  • Add eggs, one at a time, making sure to beat well after each egg.
  • In a small bowl, combine graham cracker crumbs, flour, and baking powder.
  • Slowly add half of the flour mixture to the butter/sugar mixture and beat well.
  • Add half of the milk, beat well.
  • Repeat with remaining flour and milk, beating well after each addition.
  • Fill cupcake liners 1/2 full.
  • Bake for 25 minutes, or until a toothpick comes out clean.
  • Remove from tin and let cool completely on a wire rack before frosting.
    Chocolate Ganache:
  • Heat heavy cream to boiling. You can do this on the stove in a saucepan or just pop in the microwave in a large glass bowl.
  • Add chocolate chips and allow to sit for a few minutes, letting the cream melt the chocolate. About 3 minutes.
  • After ganache has cooled, top with Marshmallow Frosting. Allow frosting to set for a few minutes before serving.

    I’m looking forward to trying these. I did camp with Bret & the boys ,in younger days, but now appreciate comfort of hotels too. The favorite for your hubby & his dad was snow-camping in the Sierras! BRRR! Definitely, a weekend at home for Mom! Boys enjoyed s’mores so much a “s’mores” Christmas ornament was a favorite.
