Patriotic Cream Cheese Shortbread Bites

It’s July! How is it July already?

Time flies when you are having fun, and that’s alright with me.It’s been crazy around here. My sister got married last weekend, so we were running around like chickens with our heads cut off. Bless my mom, because the wedding was at her house!

I was Matron of Honor, and I made the wedding cake. It was just a small two tier cake, but my sister asked me months ago to make for them. They had a dessert bar, but wanted an actual cake to cut, so I aim to please. The flavor they wanted required a cream cheese frosting, so I got a huge block of cream cheese from Costco, which meant we had a lot of cream cheese left over.

I wanted to make something cute and patriotic for the holiday, and my mom wanted me to get that huge block out of her fridge.

Well, lets just say these Cream Cheese Shortbread bites were a hit! These are a little different than your traditional shortbread. A little softer and creamier, if a cookie can be creamy? Just sweet enough with a slight tang. basically delicious.

Can we just talk about the cute little hand that was stealing cookies and sprinkles while I was tryign to take pictures?

I added some cute festive sprinkles for the Fourth of July, but you can change out the color or shape of the sprinkles and use this recipe for any holiday or event.

Patriotic Cream Cheese Shortbread Bites


  • 4 oz cream cheese, softend
  • 3/4 cup salted butter, softened
  • 2 cups flour
  • 1 tsp vanilla
  • 1 tbsp cornstarch
  • 1 1/2 cups powdered sugar
  • sprinkles


  • Prehat oven to 350 degrees. Grease a 9x13 in pan and set aside.
  • In a large bowl, cream together the cream cheese, butter and powdered sugar. Add vanilla and mix well.
  • In a separate bowl, whisk together the flour and cornstarch.
  • Carefully add the flour mixture to the butter mixture and mix until combined. If you want you can add some sprinkles now, and mix until incorporated.
  • Press the dough into and even layer in the prepared pan.
  • Sprinkle a few tablespoons of festive sprinkles on top of the dough and press gently into the dough.
  • Bake at 350 degrees for 20 minutes. Remove from oven and carefully cut into 1/2-1 in squares. Carefully remove the squares and place on a cookie sheet.
  • Return the cookie sheet to the oven and bake the cookies for another 15 minutes.
  • Cool and serve.

    Bite-sized foods are my favorite! Less guilt when I am eating little bites instead of a full-sized treat 😉 These shortbread bites are so cute and look incredibly chewy. Yum!

    I love simple recipes that don’t have a ton of ingredients and this is perfect for a grab bag or kiddo snack for when my nieces come over. I can’t wait to try it.

    This looks delicious – dangerously delicious, at that! Pretty sure if I made these, they’d be gone in a day (haha) but these look super easy to make, so definitely going to give these a go as my next dessert! 🙂
