Banana Bread

With a toddler in the house, it seems there is always bananas in the fruit basket. When Koa is begging for Cheez-Its for the 10,000th time and refuses every other option I give him, I at least know he will eat a banana instead. However, somehow we never seem to be able to eat all of them before they get too ripe. So what to do with overripe bananas? Make banana bread! This is my recipe, made a little healthier with whole wheat/all purpose flour combo, no oil, butter, or too much sugar. I do add some mini chocolate chips to the top sometimes. (wink wink) Since some of us are trying to lose some baby weight around here, this lower fat/sugar version is a great option. It’s also one of those snacks Koa will eat anytime, breakfast, lunch, dinner, dessert, just because!

Ingredients

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (optional)
  • 2 eggs, beaten
  • 2 cups mashed bananas
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup applesauce
  • 1 tsp vanilla
  • 3 tbsp mini chocolate chips (optional)

Instructions

  • Preheat oven to 350 degrees.
  • In a medium bowl combine flours, salt, cinnamon, baking powder and baking soda. Set aside.
  • In a separate bowl combine mashed banana, eggs, sugar, and applesauce.
  • Add flour mixture and mix well.
  • Pour batter into 9x5 loaf pan or 12 mini loaf pans (or muffin tin). Sprinkle mini chocolate chips on top, if using.
  • Bake for 40-50 minutes. Check with a toothpick after 40 minutes and adjust time accordingly.
